A friend of mine has asked me the recipe of the strawberry cakes that I put their pictures up on Facebook. It was a couple of weeks ago before I finally found the recipe which I'd lost. So there you go.

Ingredients
- 2 cups white sugar
- 1 (3 ounce) package strawberry flavored gelatin
- 1 cup butter, softened
- 4 eggs (room temperature)
- 2 3/4 cups sifted cake flour
- 2 1/2 teaspoons baking powder
- 1 cup whole milk, room temperature
- 1 tablespoon vanilla extract
- 1/2 cup strawberry puree made from frozen sweetened strawberries
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
- In a large bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla and strawberry puree. Divide the batter evenly between the prepared pans.
- Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.
Personal Tips:
>> For my peeps studying overseas, don't forget to make sure that the gelatin you're using is halal or suitable for vegetarians ya.
>> In my first attempt I used brown sugar in place of white sugar but it turned out unsuitable as the pink colour of the cake became brownish. So if you really love the taste of brown sugar just put in a little of it okay.
>> Strawberry puree. I remember asking the Dunnes Stores staff if they had strawberry puree and that fella said no, we only have tomato puree. It's okay I'm not making tomato cake for sure ;). Anyway instead of using fresh frozen strawberries my alternative would be canned strawberries in syrup, just blend them in the blender. Way handier and cheaper!
>> Due to the unduly high cost of the cake I am still waiting for the strawberry price to go down. Also this cake isn't healthy so don't get addicted to it or you'll lose your hourglass silhouette!
